Meyer Lemon and Goat Cheese Pizza

I adore pizza. It's one of a few foods that acts as a catch-all for whatever ingredients happen to tickle your fancy (a sandwich is another one of those foods, for those who are curious). I make homemade pizza ALL the time and I've actually become a bit of a pizza snob as a result. I love fresh crust and light ingredients so when I came across this recipe I knew I had to give it a try.

I am SMITTEN with this pizza. The combination of the creamy goat cheese mixed with the citrus from the lemon and the salty olives is a serious win. If you don't want to take my word for it, you can listen to my roommate who said it "looked really gross and weird" then tried a piece and changed her opinion because she "couldn't decided which part was her favorite".

My dad loves to make his own homemade pizza, which is really good but he just adds sausage and pepperoni.. nothing too special.

I agree! Home made pizza crust is the best and then you can put whatever you like on it. Chain store pizza can never live up to homemade crust or little independent pizza places.

The lemon sounds crazy (you eat the rind?!) but I would totally try it! I like making pizza at home too and have only been as adventurous as brie/apple/onion.

@stevenandrew: Even when you make it the classic way homemade pizza is still sooo good :).

@Jenelle: I used to LOVE fresh basil on my pizza but my basil plant died :(. I totally agree that independent/homemade pizza is far better than places like Domino's or Little Cesars.

@J. Mill: Yes, you eat the rind! After you cook it you really don't even notice it but they key is to cut it into REALLY thin slices. If it's too thick the rind will taste weird. And brie/apple/onion sounds heavenly. I think I know what my next pizza will have on top of it!
